Our olive grove — biodiversity with flavor
At Herdade da Fonte Santa, producing olive oil is a heritage that spans generations — and a commitment we renew every day. In the heart of the Alentejo region, we cultivate 90 hectares of olive groves using two distinct but equally sustainable production methods: integrated production and traditional production.

We believe in agriculture that respects the soil, biodiversity, and the balance of the ecosystem. Therefore, part of our olive grove is part of the European project "Living Olive Groves ," a study that promotes agricultural practices that regenerate and protect life in olive groves, with a positive and measurable impact on local flora and fauna.
The varieties we have chosen — Galega, Arbequina, Cobrançosa, Picual, Cordovil and Frantoio — reflect the richness of our terroir and allow us to create balanced, fruity olive oils full of character.
The harvest is semi-manual, carefully done to achieve the ideal point of ripeness, and the extraction is always cold. This way we preserve the aromatic compounds, freshness and natural antioxidants to the maximum, resulting in a pure, intense and elegant extra virgin olive oil.
We also follow the same principle in our packaging: protecting the quality and flavor of the olive oil with responsible and ecological solutions.
Our extra virgin olive oil is 100% natural. Only olive oil. Only olives. Only the truth from the earth.
