Ingredients

1 cup of orange lentils, previously soaked

1/2 chopped onion

1 grated carrot

2 cloves of garlic

1 teaspoon of oregano

1/2 can of peeled tomatoes (or 3 ripe tomatoes)

2 tablespoons of Mainovo olive oil

200g of spaghetti

Water qb

Optional: Sprinkle with oregano to finish.

Preparation

Cook the spaghetti in water with a drizzle of olive oil; Cook the soaked lentils for about 10-12 minutes, until tender;

Sauté the onion, garlic, and carrot in olive oil;

Add the peeled tomatoes and oregano. Let it cook for 5 minutes;


Add the cooked lentils to the sautéed mixture, add a little water, and let it simmer until a thick sauce forms.


Serve over spaghetti and finish with oregano.


Note: You can use pre-cooked lentils (from a jar, without salt) to reduce preparation time.
