VITICULTURE AND WINE MAKING
Planted in soil characterized by schist and granite, the grapes are organically produced and harvested at their perfect state of ripeness. The grapes are hand-picked in 20kg boxes at night, allowing for a more careful selection and better preserving the aromas. In the winery, they pass through the sorting table where a rigorous selection is made, with entry into the fermentation vats by gravity. Spontaneous alcoholic fermentation. Little intervention throughout the process and low sulphur content.
